Jes Taylor

Owner

Jes Taylor is a seasoned hospitality professional with extensive experience in some of New York City and New Jersey’s most acclaimed restaurants. He began his career at Bar Boulud, progressing from host to supervisor before advancing through the Dinex Management Program with rotations at Restaurant Daniel and Café Boulud. After a year as floor manager at Bar Boulud, Jes helped launch Dirty French with Major Food Group, contributing two years to the opening and operations of the restaurant. He later joined Colicchio & Sons and was part of the team that closed the iconic restaurant in 2016, before returning to the Dinex family as Service Director at db Bistro in Midtown Manhattan.

Jes transitioned to New Jersey hospitality as General Manager for Harvest Restaurants, overseeing Roots Steakhouse in Ridgewood and Morristown through a period of significant growth and challenges. He then took the helm at the beloved Sergeantsville Inn in Stockton for two years before assuming leadership at Marco Polo in July 2024.

Natives of Summit and Chatham, respectively, Jes and his wife, Lauren, are deeply committed to community engagement and fostering connections through food. They are passionate about reviving and revitalizing spaces, exemplified by their newest project, Aubrey’s Corner neighborhood bistro and community hub in the heart of Summit. Jes is an active member of the Emerging Leaders Board of the Community FoodBank of New Jersey (CFBNJ) and is dedicated to supporting local initiatives that strengthen his community.
